What are Duck Fat French Fries?

They are fries cooked in duck fat. That’s it. Normally, fries are made with peanut, canola, or vegetable oil. Fries cooked in duck fat are simple to make, incredibly rich and perfectly crispy. They are so good that’s it’s honestly mind-blowing that all fries aren’t made with duck fat. Yes, these questions keep us up at night. Simply put, the flavor of fries cooked with duck fat is elevated. The outer texture of duck fat fries is crispier. How to Make Duck Fat Fries

 
 

Ingredients

2 jars DUCKCHAR Duck Fat
2 Russet potatoes
Salt (to taste)

Cut the potatoes

Step 1 - Peel and cut Russet potatoes into 1/4 inch fries. Soak the fries in cold water for 30 min. If you like your french fries cut differently, go for it. Steak fries, shoestring fries, waffle fries all turn out great. If you choose a different fry shape, keep in mind that the total cooking time may increase or decrease a bit.

Step 2 - In a large dutch oven, heat duck fat to 325 degrees F. Use a candy thermometer to monitor the duck fat temperature. In general, try to maintain a temperature between 320 and 330 degrees F. To cook duck fat fries properly, ensure the temperature of the duck fat stays within this range. Pat fries dry and carefully add them to the oil. Cook the duck fat fries in small batches. Once the fries start to turn golden, remove them with tongs and drain on a sheet lined with paper towels.

Step 3 - Now, we’re going to cook the fries a second time. This step ensures that your fries turn out crispy.

Increase to the temp to 350 degrees F and add back the the fries. Cook for another minute or two for a perfect golden and crispy finish. Serve duck fat fries immediately. We like to toss them with some sea salt and then set up a wide array of dipping sauces: ketchup, mayonnaise, spicy mustard, sriracha.

Note: The rendered duck fat can be reused! Once the duck fat cools (but is still liquid), strain it with fine mesh and store in refrigerator for future use.
