The Crispy Finish

Duck Fat Fries Recipe

Ingredients

2 jars DUCKCHAR Duck Fat
2 Russet potatoes
Salt (to taste)

Cooking Directions

Step 1 - Peel and cut Russet potatoes into 1/4 inch slices. Soak them in cold water for 30 min.

Step 2 -
In a large dutch oven, heat duck fat to around 320 - 330 degrees F. Pat fries dry and carefully add them to the oil. Cook in small batches. Once the fries start to turn golden, remove them with tongs and drain on a sheet lined with paper towels.

Step 3 - Increase to the temp to 350 degrees F and add back the the fries. Cook for another minute or two for a perfect golden and crispy finish. Serve immediately.

Note: The duck fat can be reused! Once it cools (but is still liquid) strain it with fine mesh and store in refrigerator for future use.
