Ingredients

DUCKCHAR Moulard Duck Breast
Salt
Pepper
Buns
Mustard
Red onion
Lettuce
Tomato
Kosher pickles
Cheddar cheese, sliced

Cooking Directions

Step 1 - Place DUCKCHAR Moulard Duck Breast in freezer for five minutes. Remove and then grind with a sharp knife. Cut into thin slices short ways and then cut again long ways. Finally, chop until you have a nice, coarse grind. Don't overdue it, the ground meat is better with some texture.  

Step 2 - Form into two patties and season with salt and pepper.

Step 3 - Cook burgers until internal temperature reaches 135 degrees. Add cheese when there is around 5 minutes left of cook time.

Step 4 - Stack the burgers. Start with lettuce on the bottom, then red onion, the burger patty, tomato (seasoned with some salt) and pickles. Spread mustard on the top bun. Serve immediately.
