Step 1 - Score the duck. Just don't cut into the meat.
Step 2 - Season both sides with salt and pepper.
Step 2 - Cook skin side down over medium high heat for about 7 minutes or until enough fat has rendered. Flip and cook skin side up until internal temperature hits 131 degrees. Allow to rest for 6 to 7 minutes. Cut and serve.
