Ingredients

1 LB DUCKCHAR Pulled Duck Confit or DUCKCHAR Duck Carnitas
1 jar DUCKCHAR Duck Fat
8 corn tortillas

Cooking Directions

Step 1 - In a heavy pot such as a dutch oven, heat 1 jar DUCKCHAR Duck Fat to 325 degrees F. Use a candy thermometer to maintain this temperature.

Step 2 - Preheat a pan over moderate heat. Warm each side of the corn tortillas for about 30 seconds or until they are pliable and easy to work with.

Step 3 - Add DUCKCHAR Duck Carnitas or Pulled Duck Confit to tortilla. Roll it up gently, and insert a toothpick to hold taquitos together.

Step 4 -
With tongs or a slotted spoon, carefully add taquitos to oil. Cook until golden and crispy. Turn over once so that each side cooks evenly. It will only take a few minutes.
