Ingredients

DUCKCHAR Moulard Duck Breast, cubed into 2.5 inch pieces
Fresh bread (multigrain, sourdough, dealer's choice)
1 cucumber, thinly sliced
4 tablespoons hummus
4 tablespoons tzatziki
2 cups brown rice, steamed
2 cups romaine lettuce, chopped
1 cup cherry tomatoes, halved
Pita bread
Fresh dill, garnish
Pepper
Kosher salt

Cooking Directions

Step 1 - Carefully score duck breast skin. Cube duck breast into 2.5 inch pieces. Skewer the duck breast and season with kosher salt and pepper.

Step 2 -
Grill skewers over moderately high heat, turning often, until nicely charred and cooked to your preferred doneness. Pay attention to flair ups and cook over indirect heat if flair ups become problematic. Allow duck to rest for 5 minutes before enjoying. While the duck is resting, warm up the pita on the grill.

Step 3 -
Plate grilled duck skewers with hummus, tzatziki, tomatoes, lettuce, pita, and rice. Garnish with fresh dill and enjoy.
