Cooking DUCKCHAR Moulard Duck Breast on a pellet smoker or grill is one the easiest and tastiest ways to cook duck breast. It’s also one of our overall favorite approaches. We affectionately call this meal, “Traeger Duck Breast.” It ‘s the perfect combination of ease and flavor. It’s easy because, well, pellet grills are easy as heck to use. And even after only 20 minutes of cook time, the meat is infused with plenty of that smoky flavor we love.


Cooking Directions

Step 1 - Score skin of DUCKCHAR Moulard Duck Breast. Create as many scoring lines as possible and cut them as deeply as you can without piecing the meat. Season entire duck breast with Smoke Somethin' Dry Rub & Seasoning and some kosher salt to taste. Alternatively, season with a 50/50 mix of kosher salt and pepper.

Step 2 - Preheat pellet smoker to 400 - 450 degrees F. We use a Traeger Grills Pro 34 and set the temperature dial to high.

Step 3 - Cook DUCKCHAR Moulard Duck Breast skin side down until internal temperature reaches 131 F (about 20 min). The duck breast should develop a thin, crispy, golden layer of skin. Crispy duck skin is always important when you’re grilling duck breast.

Cover DUCKCHAR Moulard Duck Breast loosely with foil and let it rest for 5 minutes. The internal temperature of the duck breast will rise to 135 degrees F during this resting phase for a perfect medium rare finisn. Cut, serve, and enjoy.
