Ingredients

2 - 3 whole trout
1/2 cup brown sugar
1/2 cup kosher salt
1 gallon water

Cooking Directions

Step 1 - Combine water, kosher salt, and brown sugar. Brine trout for at least 2 hours.

Step 2 - Preheat smoker to 180 degrees F. Pat fish dry and smoke until fully cooked and flaky.

Step 3 - Serve and enjoy immediately. Alternatively, refrigerate and serve cold over crostinis and salads. It’s delicious either way.
