Paleo Sweet Potato Duck Tacos

Ingredients
1 DUCKCHAR Moulard Duck Breast
1 red onion, diced
4 sweet potatoes
1 jalapeno, chopped
Cilantro, minced
1/2 pineapple diced
1 lime
Smoke Somethin’ Rub & Seasoning
Cooking Directions
Step 1 - Roast the sweet potatoes at 400 degrees F for 30 minutes or until cooked. For some extra flavor, we cook them at 400 degrees F on a pellet smoker.
Step 2 - Grind the duck. Chill duck in freezer for five minutes. Remove and grind with a sharp blade. First, cut into thin slices short ways. Then cut again long ways. Chop until coarsely ground - no need to overdo it. Season with a tablespoon of Smoke Somethin’ Rub & Seasoning. Cook in cast iron skillet.
Step 3 - With a knife, make a cut across the length of the sweet potato. Ue a spoon to gently scoop out enough potato to make space for the taco filling.
Step 4 - Stuff “taco” with duck, onion, pineapple, jalapeno, and cilantro. Squeeze some fresh lemon juice over the taco (to taste). Serve and enjoy immediately.
