1 pound skirt steak
4 tablespoons Smoke Somethin’ Rub & Seasoning
4 limes, juiced
1/2 cup olive oil
1 tablespoon chili powder
1/2 cup cilantro, chopped
5 large garlic cloves, minced

Cooking Directions

Step 1 - Prepare the marinade. Combine all non-meat ingredients and bowl and mix. Add steak, cover bowl with plastic and place in fridge for 4 to 12 hours.

Step 2 -
Pre-heat pellet smoker or grill to high and sear each side of meat for about 3 min for a medium rare finish (depending on thickness of steak).

Step 3 - Remove from grill and let cool for 7 min. Slice thinly against the grain and serve.
