Smoke Somethin' Rub & Seasoning
2 LB skinless chicken thighs
2 tablespoons cilantro
2 tablespoons olive oil
Step 1 - Combine chicken thighs, olive oil and 1 tablespoon of lime juice in large bowl. Add Smoke Somethin' Rub & Seasoning until chicken is nicely coated. Place in fridge for 1 hour.
Step 2 - Grill chicken over medium-high heat until internal temperature reaches 165 degrees. If you're using a Traeger, set grill to 375 degrees.
Step 3 - Once cooked, garnish with cilantro and lime wedges. Serve immediately.
