Step 2 - Apply a generous seasoning of Smoke Somethin' rub to the duck breast. Alternatively, opt for a Texas-style seasoning by generously coating the duck breast with a 50/50 blend of kosher salt and pepper.


Smoke Duck Breast

Step 3 - Warm up the pellet smoker to a temperature of 225 degrees F. In this particular recipe, we're utilizing a Traeger Pro 34, but any type of smoker will suffice. Place the duck breast on the smoker with the skin side facing upwards and allow it to smoke for a duration of 30 to 60 minutes, or until the internal temperature registers at 115 degrees F. When it comes to wood choice, applewood is our preferred selection for enhancing the flavor of smoked duck breast.


Sear Duck Breast

Step 4 - To achieve a crispy texture for the smoked duck breast skin, heat a cast iron skillet over medium heat and sear the skin side until the internal temperature reaches 131 degrees F.

Loosely cover the smoked duck breast with foil and let it rest for 5 to 10 minutes before proceeding to slice.
