Preparing for the Smoke
If this is your first time smoking and you're using a gas, kamado-style, or charcoal grill, we're here to help.
Soak wood chips in water for 20 minutes prior to smoking. Typically two handfuls of wood chips are appropriate if you're cooking two DUCKCHAR Moulard Duck Breasts. But like anything, tastes vary, feel free to add more or less depending on your preferences.
Fill Chimney starter ⅓ of the way full with charcoal briquettes. When the charcoal is ready, place charcoal on ½ of the grill for indirect cooking setup. Next, place an aluminum pan adjacent to the charcoal grills. Fill the pan with 2-3 cups of water. The water assists in helping achieve a low cooking temperature. Wait 30 minutes to 1 hour for the coals to burn down. When the coals are ready, put moist wood chips on the coals. Place your cooking grate over the coals/woodchip, and water set up. Place DUCKCHAR, skin side up, on the opposite side of the grill as the charcoal. Cover the grill. Do not open the grill unless you feel you need to add more coals. Smoking DUCKCHAR typically takes approx. 90 minutes. You generally do not need to add more coals. Ceramic or Kamado Style Grill
Add lump charcoal and ignite a fire starter in the center of it. Once lit, arrange coals in two-zone format so that the meat can be placed over indirect heat. Dial in the temperature to desired range. Once temperature is reached, place wood chips on coals, add the duck, and close the lid. Do your best to keep the grill closed at all times. Your taste buds will thank you for your patience.
Your gas grill may come equipped with a metal smoker box. Look to the grill manufacturer’s directions for the most effective and safest way to use this device. If your grill does not have a metal smoker box, you can always purchase one as an add on here. Just place the smoker box on your cooking grate and add moist wood chips to the smoker box.
