Duck fat fried chicken sandwiches are just like a regular fried chicken sandwich but even better. In this recipe, we’ll teach you how to make a duck fat fried chicken thigh sandwiches are even better. Richer tasting, crispier chicken starts with duck fat. Switching out the “usual” cooking oil with duck fat is all you have to make the best fried chicken sandwich you’ll ever experience. In this recipe, you’ll make a spicy chicken fried sandwich but if you can’t handle the heat, it’s just as good without it. Our cut of choice is the boneless skin-on chicken thighs but the same recipe can be applied to the breast.

 
 

Ingredients

2 jars DUCKCHAR Duck Fat
2 chicken thighs, boneless and skinless
Kosher salt
Pepper
2 eggs
1 cup whole milk
2 cups all purpose flour
Mayonnaise
Spicy pepper spread
Kale, chopped
Cabbage, chopped
Kosher pickle slices

Prepare chicken for fryer

Step 1 - Pat chicken thighs dry and season with kosher salt and pepper.

Step 2 - In one bowl, mix milk and eggs. In another bowl, add flour.

Step 3 - Dip chicken thighs in batter and then flour. Repeat this process twice for each thigh.

Fry chicken thighs

Step 4 - Heat Duck Fat in a large dutch oven at 325 degrees F. Fry two thighs a time. Carefully flip the thighs over every few minutes and cook until they are crispy and golden. It should take 15 to 22 minutes.

Assemble duck fat hot chicken sandwich

Step 5 - Remove from dutch oven and allow to rest and cool for a few minutes on a plate lined with paper towels.

Step 6 - Make fried chicken thigh sandwich. Spread hot peppers on bottom bun and mayonnaise on top bun. Stack sandwich in this order starting from base: slaw, chicken thigh, pickles on top.
