Duck Fat Fried Fish Tacos

Ingredients

2 jars DUCKCHAR Duck Fat
2 pound fresh cod
Kosher salt
1 cup Mexican beer
1 teaspoon kosher salt
Corn tortillas
2 limes
1/2 cup cherry tomatoes, diced
2 cups cabbage, chopped
1/2 cup cilantro, chopped
Hot sauce

Prepare and batter fish

Step 1 - Cut fish into 1 x 2 inch pieces.

Step 2 - In a large bowl, mix flour and kosher salt. Add beer and whisk mixture together.

Step 3 - Dip fish into batter and mix around until thoroughly coated.

Fry fish

Step 4 - In a large dutch oven, heat Duck Fat to 325 degrees F. Carefully add beer-battered fish to duck fat. Fry fish in small batches. Gently flip over every minute or two and fry until golden and crispy (about 3 to 5 minutes).

Make fried fish tacos

Step 5 - Carefully char corn tortillas over a gas burner.

Step 6 - For each fish taco, add two pieces of duck fat fried fish and top with cabbage, cilantro, tomatoes, hot sauce and a squeeze of lime. Serve and enjoy immediately.
