Ingredients

1 tablespoon DUCKCHAR Duck Fat
2 eggs
1/2 cup tomato, diced
1/2 cup black beans
1/4 cup red onion, diced
1/2 cup sharp cheddar, grated
1/4 cup Anaheim pepper, diced
1 tablespoon, spicy red pepper spread
2 corn tortillas, small  

Cooking Directions

Step 1 - Char tortillas over a gas burner. Flip them over every 10 seconds for about a minute.

Step 2 - Add duck fat to a small cast iron sauce pan (about 4.5 inch diameter). Next, crack an egg on top of tortilla and lightly layer with beans, tomato, pepper, and cheese. Then repeat this same stack again starting with another tortilla.

Step 3 - Cover top layer with sharp cheddar cheese.

Step 4 - Preheat oven to 400 degrees F. Cook for 20 minutes.

Step 5 - Carefully remove huevos rancheros from cast iron dish with a spatula. Serve family style on a large plate.
