Ingredients

DUCKCHAR Duck Fat
1 pound fresh tomatillos
3 tablespoons garlic, minced
Salt (to taste)

Cooking Directions

Step 1 - Remove husk and rinse each tomatillo thoroughly with water. Cut into halves.

Step 2 - On a large baking sheet, spread out tomatillos and brush with duck fat. Season with salt and garlic.

Step 3 - Preheat pellet smoker or oven to 450 degrees F. Roast tomatillos until they are soft and slightly charred (about 15 minutes). Remove from heat and allow to rest for 15 minutes.

Step 4 - Puree tomatillos in a blender or food processor and serve salsa immediately.
