Duck Fat Split Pea Soup
1 teaspoon salt
Pepper (to taste)
3 tablespoons rendered duck fat
Cilantro, chopped (for garnish)
1 pound dried green split peas
1 yellow onion, chopped
2 cups diced carrots
4 garlic cloves, minced
8 cups vegetable stock
Step 1 - Heat rendered duck fat in large pot and saute carrots, onions, and garlic for about 15 minutes.
Step 2 - Add vegetable stock, salt and split peas to pot and bring to a boil. Simmer covered for about 1.5 hours.
Step 3 - Optional: puree with emulsifier.
Step 4 - Salt and pepper to taste and serve in bowls garnished with red pepper flakes and cilantro.
