Ingredients

1 DUCKCHAR Moulard Duck Breast
1 baguette, fresh and sliced
1/4 cup mint, fresh
1/4 cup chives, fresh and sliced
3 tablespoons DUCKCHAR Duck Fat
8 ounces burrata
Kosher salt
Black pepper

Cooking Directions

Step 1 - With a sharp knife, score the duck breast skin. Cut parallel lines lengthwise and widthwise. Avoid piercing the meat. Season with kosher salt and pepper.

Step 2 -
Heat a heavy skillet over medium high heat and sear duck breast skin side down. Cook until the skin is crispy and golden. As the duck fat renders out, ladle it from the pan with a spoon.

Step 3 -
Flip and cook skin side up until internal temperature reach 130 degrees F. Set duck breast aside loosely covered with foil

Step 4 -
Brush bread sliced with duck fat and toast in oven preheated to 400 degrees F. Remove from oven once golden and crispy.

Step 5 -
Make the crostini. Add burrata to bread and top with thin slice of duck breast and mint or chives as garnish. Serve immediately.
