1 Whole chicken, 4 pounds
Smoke Somethin’ Rub & Seasoning
2 tablespoons lime juice
2 tablespoons lemon juice
2 tablespoons olive oil
Step 1 - Prepare the chicken. With chicken breast side down, remove the backbone with poultry shears. Turn the chicken over and flatten.
Step 2 - Rub entire chicken with olive oil and then season all sides generously with Smoke Somethin’ Rub & Seasoning. Season under the skin where possible. Finally, add lime and lemon juice to all sides of chicken.
Step 3 - Preheat pellet smoker or oven to 400 degrees F. Place chicken flat on grill grates (breast side up) and cook for 40 - 50 minutes or until thickest part of meat reaches 165 degrees F.
Step 4 - Once cooked, allow chicken to rest for 5 minutes before serving. Enjoy.
