Ingredients

4 DUCKCHAR Moulard Duck Legs
Smoke Somethin’ Rub & Seasoning
Kosher salt
Cilantro, chopped
Salsa
Sweet onion, chopped
Cherry tomatoes, diced

Cooking Directions

Step 1 - Trim any extra skin from Moulard Duck Legs. Use a knife to gently pierce the skin all over. This step allows the fat to render off during the cook. Season duck legs with Smoke Somethin’ and kosher salt

Step 2 - Preheat smoker to 225 degrees F. Smoke Moulard Duck Legs skin side up until the meat easily falls away from the bone. This step will take about 5 hours.

Step 3 - Allow duck legs to cool for a few minutes. Then shred with a fork.

Step 4 - Make the duck tacos. Pile on the smoked duck and lightly top with cilantro, onion, and salsa. That's it.
