Smoked Duck Bacon Jalapeño Poppers
7 slices duck bacon (here's the recipe >)
1 cup cream cheese
1 cup sharp cheddar, shredded
2 tablespoons duck fat
Salt (to taste)
Pepper (to taste)

Step 1 - Heat duck fat slightly so that it takes liquid form. In bowl, combine duck fat cheddar and cream cheese.
Step 2 - Cut jalapeños in half and deseed completely.
Step 3 - Pack each half of jalapeño with cheese mix. Put jalapeños back together and wrap with a slice of duck bacon. Hold popper together with a toothpick
Step 4 - Smoke at 225 F for 10 minutes. Increase heat to 400 F and cook for another 20 to 25 minutes.
Step 5 - Remove poppers smoker and allow to cool for 5 min. Serve.
