DUCKCHAR Smoke Somethin’ Rub & Seasoning
Step 1 - Score DUCKCHAR Moulard Duck Breast. Just be sure not to cut into the skin. Season with Smoke Somethin’ and a little kosher salt (to taste)
Step 2 - Cook DUCKCHAR Moulard Duck Breast on smoker at 225 degrees F. Remove duck from smoker once internal temp reaches 120 degrees F.
Step 3 - Sear skin-side of DUCKCHAR Moulard Duck breast in a cast iron skillet over medium-high heat. Cook until internal temperature reaches 130 degrees F. Set duck aside for 5 - 10 minutes lightly covered with foil before slicing. Brush brioche buns with duck fat and toast in over or grill.
Step 4 - Slice DUCKCHAR and assemble the sandwiches with pickles, duck and bbq sauce. Serve and enjoy immediately.
