Smoked Tri-Tip Sandwich

DUCKCHAR Smoke Somethin’ Rub & Seasoning
2 pounds Prime tri-tip
1 large onion, sliced
2 large green peppers, sliced
1 jalapeno, thinly sliced
Harissa sauce
Sour cream
Hoagie rolls

Cooking Directions

Step 1 - Preheat smoker to 250 degrees F.

Step 2 -
Season tri-tip to taste with Smoke Somethin’ Rub & Seasoning.

Step 3 - Cook tri-tip until it reaches an internal temperature of 125 degrees F.

Step 4 - While tri-tip is cooking, saute onion, green pepper, and jalapeno with duck fat. Cook until soft and slightly browned.

Step 5 - Combine 1 tablespoon harissa, with 1/2 tablespoon horseradish and 3 tablespoons sour cream. Set aside for later.

Step 6 - Once tri-tip is cooked, sear each side in duck fat in a preheated cast iron skillet over high heat.

Step 7 - Allow tri-tip to rest for 5 - 7 minutes. Then slice and make the sandwiches. Brush both sides of hoagie with sauce and from bottom to top stack tri-tip, then vegetables and top with arugula. Serve and enjoy immediately.
