Split pea soup is a winter favorite - especially now with the chill that's overtaken a good portion of the country. Until a few weeks ago, each time we made the recipe, it involved sauteing the vegetables in olive oil or bacon fat. It's almost embarrassing that we never used duck fat as a substitute. But there we were, making the same recipe again, except this time there was a jar of rendered duck fat on the counter and... EUREKA. This example is also quasi-strong evidence that a messy (but clean) kitchen can be a good thing.
