America! There’s more than one type of duck. Yes. You’ve been missing out BIG TIME! Plenty of duck cuisine lovers don’t know about this distinction because generally, only one type of duck is available in the US. The most important breeds can be broken down into 4 ducks: Mallard, Moulard, Pekin, and Muscovy.
Why should anyone care?
For starters, the ducks that fly through the air are nothing like the ones served in a good restaurant. In other words, all ducks are not created equal. Some are better for this, while others are better for that. Choosing the right one depends on your style.
Starting Monday, we will break down each type. We’re going to get into so much detail that you will never read about ducks again.
